There aren't many. Patrick McEnroe has a degree in political science from Stanford (Graduated 1988) and Paul Goldstein has a degree in human biology (graduated 1998) also from Stanford. Brian Vahaly has a degree from University of Virginia (2001). That's pretty much it.
I think there's a pattern here, though. They're all Americans and none of them got into the top 25 at any point in their careers. Most players just opt out of college or many will go to college for one or 2 years and drop out to focus on pro tennis. College tennis doesn't really put you in the position to excel at professional tennis, it would seem.

Nowadays, tennis players with college degrees are unheard of. Going back a few years, the first player to come to mind is John McEnroe. McEnroe played for Stanford and helped them win a national title but did not graduate - he turned pro after making it to the Wimbledon semifinals as a qualifier. His brother Patrick did graduate Stanford, however.

I think that James Blake is currently attending college. And I heard that he is majoring in Sociology or something like that. Maybe they take on-line classes.

Yes, they take night classes and often time off in between majors. Because of the early deterioration of the body caused by tennis, most players skip college.
